There is a new Carlton resident who, from what I hear and the little I have tasted, is quite the baker!
Yesterday he popped in the shop and brought me a tasty sample.......a little frosted Lemon Clove cookie.
Oh it was so delightful! Refreshing yet so "holiday" tasting.
I decided to bake up a little batch this morning.
Here is the recipe that I used..........perfect for a little "sugar fix" or, a good little batch of cookies to give away.....
Lemon Clove Cookies
The flavor combination of clove and lemon is remarkably delightful.
Prep: 15 min - Chill: 1 hour - Cook: 15 min per cookie sheet
3/4 cup butter or margarine, softened
1 cup sugar
1 egg
1/2 teaspoon Lemon Extract
1/8 teaspoon salt
1/4 teaspoon Ground Cloves
2 cups all-purpose flour
Lemon Glaze:
1 1/2 cups confectioners sugar
2 tablespoons plus 1 teaspoon water
1/4 teaspoon Lemon Extract
1. Beat together butter and sugar with electric mixer. Add egg, lemon extract and salt. Beat until smooth. Stir in ground cloves and flour.
2. Divide dough in half. Wrap each half in wax paper to form a cylinder about 1 1/2 inches in diameter and 9 inches long. Chill dough.
3. Preheat oven to 350°F. Cut dough into 1/4-inch slices. Arrange on ungreased cookie sheet and bake 12-15 minutes. Remove from pan and cool. Prepare Lemon Glaze.
4. Combine confectioners sugar, water and lemon extract. Drizzle over cooled cookies.
